Oatmeal Chewies


My children love anything with oatmeal in it. I was a bit tired of the same old breakfast bars we normally make. What was appealing to me in this recipe, was the jam filling, and that this recipe does not use eggs!

Here is the original recipe. I've doubled the recipe below to have enough for the top and bottom of the bar. It just didn't seem like enough to completely cover my 9×13 glass dish without doubling.

I hope you enjoy! My kids LOVED it! They've named them oatmeal chewies.

Oatmeal Chewies
1 1/2 cups all purpose flour
1 cup rolled oats
1 /2 cup firmly packed brown sugar
1/2 cup chopped nuts (I omitted the nuts)
1/4 tsp salt
3/4 cup butter

Combine flour, oats, sugar, nuts and salt in a large mixing bowl. Cut in butter. Reserve about 1 1/2 cups for topping. Press the remainder in a greased 9 x 13 inch pan. Spread with jam. Bake 25-30 minutes at 350 degrees. Cool completely and cut into bars.

(Note: the only change to the directions that I made, was to divide the dough into 2 equal amounts: 1 for the bottom that I pressed in with the back of a fork. Then I spread the jelly with the back of a spoon. And pressed the remainder of the dough over the top with the fork again. So simple!)
