There are some nights, I just need a no fuss, easy to cook, easy to clean up, meal in a hurry. That is why, I call this “Hurry Up Tortellini Soup”!
This recipe makes a very large batch, since we like eating it as leftovers. It tastes even better the next day.
Here are the cast of characters…
Ingredients:
3 Cartons of Swanson Low Sodium Chicken Broth
Twin Pack of Rozzano Gourmet Five Cheese Tortellini
28 Slices of Pepperoni (cut into strips)
2 Tsp Black Pepper
4 Tsp Minced Garlic
3 Tsp Dried Basil
Pinch of Shredded Parmesan Cheese for Garnish
Directions:
Pour broth into the pot and bring to a rapid boil. Add chicken, tortellini, pepper, garlic and basil. Turn down heat to medium and let it boil gently for 5-7 minutes, stirring occasionally. Remove from heat. Stir in pepperoni and let stand for 5 minutes. Ladle into bowls and garnish with a pinch of parmesan cheese.

You can certainly make this meal even more economical by using bouillon cubes instead of pre-packaged broth. Or even make your own broth and keep it in the freezer! I did not add the cost for the seasonings as I had them on hand, and felt that the cost was negligible.
Think about adding other things such as vegetables, chicken instead of pepperoni, or whatever you think sounds good. Soup is very versatile that way.
Quick Tip: I keep that massive bag of pepperoni in my freezer, and just take out a few pinches as I need them. No need to defrost! They cook up quickly in all recipes.

I bought the supplies to make this! There is an in-store coupon for the pepperoni for $3 off making it only $3 for the bag. I did buy the frozen cheese tortellini to try instead of the fresh they were pretty much the same price but you get more with the frozen so we will see how that comes out.
