Take a stroll through BJ’s Wholesale Club, and you will be pleasantly surprised to find that they now offer over 150 organic food items (and growing).  Recently, they have introduced HARVESTLAND® by PERDUE® fresh organic chicken to their meat section.  All clubs now carry organic whole chicken, organic boneless chicken breast, and organic boneless chicken thighs.  Not only is the chicken organic, but HARVESTLAND® by PERDUE® chickens are raised free-range on certified-organic farms.  The label also lists:

  • No hormones
  • No steroids
  • No antibiotics
  • No animal by-products
  • Cage free
  • Verified by the Non-GMO Project
  • USDA certified organic

I thought I would give HARVESTLAND® by PERDUE® fresh organic chicken breasts a try, and make Oven Baked Chicken Fajitas!  There is a story as to why I decided to do oven baked.  I went to fire up my grill, and found out that I was out of propane.  It was a happy mistake though, because these Oven Baked Chicken Fajitas are packed with tender, juicy goodness.  It was very easy to whip up for a weeknight meal.

First, I made homemade Fajita Seasoning Mix.  More flavorful (and healthier) than the store bought packets.

Next, I lined a baking dish with foil to make cleaning up a breeze.  I cut the chicken breast into 1/2 inch strips.  Sliced up onion and peppers.  Dumped in the seasonings and some extra virgin olive oil.  Squeezed the juice of a lime over the top, and tossed it around until coated.  It looks messy, but soon the entire house filled with the aromas of a Mexican restaurant

Tip: If you freeze your chicken, slice them while still frozen.  It makes it easier to get thin slices.

Here’s how they looked coming out of the oven.  YUM!!  Each piece had plenty of seasoning.  The meat was tender, and the onions and peppers were cooked to caramelized perfection.  There was plenty of fajita sauce for each wrap.  You don’t want to skimp layering the onions, peppers and juices into your tortilla wrap.

We simply ate these with another squeeze of lime and some sour cream.  Though cheese, salsa, and guacamole would be great on top.  A nice cold beer would also pair well with this dish.

So how did the HARVESTLAND® by PERDUE® fresh organic chicken breast taste in comparison to conventional chicken?  In my opinion, it tasted fresher.  There was no gamey aftertaste.  I thought the meat looked plumper, too.

    These look delicious! We usually make our fajitas on the stove but I think cooking them in the oven sounds like a really great idea! definitely trying this out next time.

    We’ve run into the same problem this week – grill was out of gas! Great way to improvise and bake the fajitas instead! And I’m thinking clean up was pretty easy too!
