I grabbed my keto expert friend and took her on my grocery shopping trip. I knew that together we would be able to make a list of all Costco had to offer.

Let's get cooking with some mouth-watering recipes that are so good, even your non-keto friends will be asking for seconds.
1. Cheesy Bacon-Wrapped Chicken
- Ingredients: 4 chicken breasts, 8 slices Kirkland Signature Bacon, 1 cup shredded cheddar cheese, 1 tbsp avocado oil, salt, and pepper to taste.
- Steps:
- Preheat your oven to 375°F (190°C).
- Season chicken breasts with salt and pepper.
- Wrap each breast with 2 slices of bacon.
- Heat avocado oil in a pan over medium heat and sear each side of the chicken for 2 minutes.
- Transfer to an oven-safe dish, top with shredded cheese, and bake for 20 minutes.
2. Keto Beef Stir-Fry
- Ingredients: 1 lb beef strips, 2 tbsp coconut oil, 1 bell pepper (sliced), 1 onion (sliced), 2 tbsp soy sauce (or coconut aminos), 1 tsp stevia, salt, and pepper to taste.
- Steps:
- Heat coconut oil in a large pan over medium-high heat.
- Add beef strips, cooking until browned.
- Toss in the veggies, soy sauce, stevia, salt, and pepper, stir-frying until veggies are just tender.
3. Creamy Spinach & Mushroom Casserole
- Ingredients: 2 cups baby spinach, 1 cup mushrooms (sliced), 1 cup cream cheese, ½ cup whipping cream, 1 cup shredded mozzarella, 2 tbsp butter, salt, and pepper to taste.
- Steps:
- Preheat your oven to 350°F (175°C).
- In a pan, melt butter over medium heat. Add mushrooms, cooking until soft.
- Add spinach, cream cheese, and whipping cream, stirring until well combined.
- Transfer to a baking dish, top with mozzarella, and bake for 15 minutes.
4. Keto Salmon Florentine
- Ingredients: 4 salmon fillets, 2 tbsp olive oil, 2 cups baby spinach, 1 cup heavy cream, ½ cup grated Parmesan, 1 tsp garlic powder, salt, and pepper to taste.
- Steps:
- Preheat your oven to 400°F (200°C).
- In a pan, heat olive oil over medium heat. Sear salmon on both sides and set aside.
- In the same pan, add spinach, cream, Parmesan, garlic powder, salt, and pepper, cooking until thickened.
- Place salmon back in the pan, spooning the sauce over. Bake for 10 minutes.
5. Bacon and Egg Cups
- Ingredients: 12 slices Kirkland Signature Bacon, 12 eggs, salt, and pepper to taste.
- Steps:
- Preheat your oven to 350°F (175°C).
- Line each muffin cup with a slice of bacon, forming a cup.
- Crack an egg into each bacon cup, seasoning with salt and pepper.
- Bake for 15-20 minutes, depending on how runny you like your yolks.
