As someone who's always up for a good cooking challenge – especially when it involves whipping up delicious meals on a budget – I took it upon myself to create a week-long dinner meal plan using items from BJ's Wholesale Club.
I also spotted menu cards near the front entrance at our local BJ's that inspired me to get back to sharing menu plans on the blog.
And let me tell you, folks, this was no easy feat! But I managed to pull it off with a bit of creativity, a lot of love, and a pantry full of sale items.

The items I used are on sale at BJs. I'll include a shopping list with prices at our current BJs in Western NY. Your prices may vary. I hope this will help you to meal plan this week and try something new.

Saturday: Homemade Pizza with Ricotta & Tomatoes
Get the family involved in cooking with this fun DIY pizza night. Use store-bought pizza dough ( Or Bj's King Arthur PIzza Flour Dough) , then top with a smear of ricotta, slices of Roma tomatoes, and a sprinkle of mozzarella. Sprinkle on one of BJs fresh spice grinders mix- I love the Italian one.

Bake until golden and bubbly. Cooking time: 15 minutes. Serves 4.
Sunday: Creamy Chicken & Tomato Pasta

Here's the ultimate shopping list for our week of culinary adventures. Trust me; I've been around the grocery store block a time or two (or a hundred… but who's counting?), so I've got this down to a science. 🛒📝

- Chicken (you'll need enough for four servings, about 1.5 pounds should do the trick)
- Green bell peppers (grab a couple, there is a BJ's coupon after all!)
- Soy sauce, garlic, ginger, and honey for that scrumptious stir-fry sauce
- Rice or noodles (whatever floats your boat!)
Ricotta & Tomato Pasta Bake
- Barilla pasta (a pound should suffice)
- Ricotta cheese (one tub is plenty)

- More Barilla pasta (penne works great for this one)
- Heavy cream for the sauce (it's not called “creamy” chicken pasta for nothing)

Really? It is the only way we cook it. I buy Jasmine rice and do one cup rice and one cup water. Mix it up. Then Pressure cook it for two minutes. It comes out sticky just the way the girls like it. If you do two cups rice and two cups water then I do three minutes on Pressure cook. How do you normally cook yours? I haven’t tried any other rice besides Jasmine.
